• Studied food knowledge and health standards and temperature controls when handling foods. • Preparation of mis en place and food for the college for over 300 students and stuff • Acted as the temporary head chef in the school’s mass production kitchen • Specialized in various sections of the kitchen; garde manger, saucier, rotisserie and pastry • Engaged in hotel experience where i worked at boma hotel alongside other chefs of all levels • Studied food and beverage service operations • Learned table set up and everything there is to know about table set up, guest handling and guest interactions.
Work & Experience
• Worked in the Arabic restaurant for a month where my opening duties were switching the gas on, fryer and the tandoori • kitchen clean up and sanitation of all the food storage and prep areas before mis en place. • mis en place preparation before a la carte service begins • confirming the number of bookings • setting up and manning the breakfast buffets. • running the live stations • properly doing the closing duties which included cleaning, storage and labeling of foods.
